I have been without the use of my dough sheeter for the past week and today it was finally fixed. A gear had broken inside the machine and I needed a replacement. It is basically a mechanical rolling pin and is the workhorse of the bakehouse after the ovens. All the different doughs that we make here, from croissant to puff pastry to all the tarts as well as cookies pass between the two steel rollers of this machine. Without it I am in the equivalent of the age before electricity and have to do all the laminations and rolling with a wooden rolling pin. Here is a picture of it. Made in Switzerland, it is a thing of beauty and without it I am lost.
